How to override the mail notification entirely

If you find yourself in need of completely customising the email notification process, the easiest way to do this is to: 

1. Remove all notification emails from within Form Settings (metabox) > Notifications (tab)
2. Hook into the af/form/submission hook and use WordPress' core wp_mail() function within your handler to send custom emails.
